The food industry today is a rapidly developing industry that uses countless food dyes, which, according to many international organizations, are safe. One of them is E 171 and E 173, which are very common in the industry, we decided to study the literature data regarding the safety of these food additives.

Key words: influence of food dyes, E 171 and E 173 on brain activity, behavioral character of patients.
